Asian Pulled Pork Sandwich
This Asian Pulled Pork Sandwich combines the many spicy flavors of radishes, arugula, and garlic to get a final, delicious outcome. Everything in this recipe can be found at Lunds & Byerly's, even the sunflower shoots! Try this recipe the next time you have a picnic or even just sitting in.
Instructions
  1. Heat oven to 400 degrees. Place bread on baking sheet. Bake until golden brown (about 8 minutes). Remove from oven.
  2. Heat broiler to high. Cut ½ inch off each end of ciabatta. Slice loaf in half horizontally. Scoop out inside of bread to create a shell; reserve for another use. Place halves, cut side up, on baking sheet; brush with oil. Broil until golden brown (2-3 minutes).
  3. In a small bowl, combine peanut sauce, garlic, and lemon peel. Stir in pork and cucumber. Spread pork mixture on bottom half of ciabatta loaf; top with radishes, green onion, arugula, and sunflower shoots. Place ciabatta top on sandwich. Slice crosswise into 6.
