Try this simple and delicious Avocado Toast and Microgreens for a quick breakfast. The healthy fat from the avocado will help you stay full until lunch.

- 2 pieces bread, Whole Wheat, White, or GF
- 1 medium avocado
- 1 cup The Greensted favorite microgreens
- 1/4 teaspoon Lemon infused olive oil
- Drizzle Lemon Balsamic Vinegar
- Sea Salt as desired
- Fresh grated cheese
- Toast the bread. Slice avocado in half; remove pit. Scoop out or slice the flesh.
- Drizzle Lemon infused olive oil on toasted bread. Spread avocado over the oil.
- Top with generous portion of your favorite microgreens and grated cheese. Drizzle with balsamic vinegar. Enjoy!
