As seen on Fox 9 News, this salad is a great addition to any weeknight dinner. Add a protein and you've got a full meal. Certainly can impress your guests. It is a little sweet and a little tangy -- just the right balance!
16 ounce bagThe Wacky Salad Greens with Microgreens
2ouncesZesty MixOr your favorite Microgreens
1Small PackageSno Pac Frozen Blueberries or RaspberriesUse fresh if available
3-4ouncesFavorite granolathe nuttier the better
1-2ouncesdried CranberriesPRO TIP: Add to Dressing to plump
2-3 ouncesFresh Parmesan CheeseShredded or rough cut
Dressing
3ozJelly - choose an unusual flavor i.e. Red Pepper or Wine Jelly(not jam) makes a nice contrast to the sweet
3-4 teaspoonsChampagne infused vinegar
2-3tablespoonsInfused Extra Virgin Olive Oil (Blood Orange or other infused flavor)Blood Orange is our favorite
1/2teaspoonDijon mustard
1/2teaspoonground cinnamonOr Garam Masala spice
1/2teaspoonlemon juice
1/8teaspoonSalt
Fresh ground pepper to taste
Instructions
For dressing: Put jelly in a small bowl. Add remaining ingredients and whisk together. Stir in dried cranberries or save to add to salad. Add freshly ground pepper per taste preference.
Salad: Place salad greens and additional microgreens in a large serving bowl OR spread on a large platter.
Note: if plating individually, spread ingredients equally on 6-7 plates, hand-pass dressing.
Arrange berries on top (if frozen, let thaw slightly)
Rough cut your Parmesan cheese, granola, and cranberries if saved. Drizzle dressing on top OR put dressing in a small serving dish to pass.
Notes
Make-ahead tip: Prepare dressing adding cranberries. Let sit overnight.Add a protein: Add cooked black beans, garbanzo beans or cooked, sliced chicken.
