Season's Best Microgreens Salad

Take advantage of locally grown, super fresh garden veggies and berries. This is a great lunch or dinner salad, Add chicken, and you've got a wonderful, cool main dish.

Ingredients

For the salad

  • 1/2 cup Fresh Spinach or mixed baby greens
  • 1/2 cup Mixed Microgreens The Greensted Medley Salad Recipe Pack
  • 1/2 cup Mixed berries If using strawberries, slice them
  • 1/2 Avocado ripe but not too soft; may drizzle with lime juice and sprinkle lightly with salt.
  • 1/4 cup Slivered Almonds optional
  • Favorite grated or crumbled cheese Feta, Romano, Parmesan

For the dressing:

  • 2 Tablespoon EVOO
  • 1 Tablespoon Lemon infused balsamic vinegar
  • 1/2 clove chopped garlic (optional)
  • 1-2 Tablespoons Honey
  • Dash of salt and pepper

Instructions

  • Divide the spinach/baby greens onto two serving plates. Layer mixed microgreens on top.
  • Divide the mixed berries, avocado, shredded carrot between the two plates.
  • Whisk vinaigrette ingredients together in a small jar.
  • Drizzle on top of the salad plates. Sprinkle with almonds and cheese. ENJOY!
