Season's Best Microgreens Salad
Take advantage of locally grown, super fresh garden veggies and berries. This is a great lunch or dinner salad, Add chicken, and you've got a wonderful, cool main dish.

Ingredients
For the salad
- 1/2 cup Fresh Spinach or mixed baby greens
- 1/2 cup Mixed Microgreens The Greensted Medley Salad Recipe Pack
- 1/2 cup Mixed berries If using strawberries, slice them
- 1/2 Avocado ripe but not too soft; may drizzle with lime juice and sprinkle lightly with salt.
- 1/4 cup Slivered Almonds optional
- Favorite grated or crumbled cheese Feta, Romano, Parmesan
For the dressing:
- 2 Tablespoon EVOO
- 1 Tablespoon Lemon infused balsamic vinegar
- 1/2 clove chopped garlic (optional)
- 1-2 Tablespoons Honey
- Dash of salt and pepper
Instructions
- Divide the spinach/baby greens onto two serving plates. Layer mixed microgreens on top.
- Divide the mixed berries, avocado, shredded carrot between the two plates.
- Whisk vinaigrette ingredients together in a small jar.
- Drizzle on top of the salad plates. Sprinkle with almonds and cheese. ENJOY!
