Ingredients

Vinaigrette

  • 1 1/2 cups strawberries, diced
  • 2 tbsp White Balsamic Vinegar
  • 1 tsp Pure Maple Syrup
  • 2 tsp Lime Juice
  • 3 Tbsp olive oil

Salad

  • 6 oz The Wacky Salad with Sunflower Shoots
  • 2 oz Pea Shoots microgreens Rough chopped
  • 2 radishes thinly sliced
  • 1-2 Green Onions OR Baby Salad Turnips sliced thinly
  • optional strawberries, halved
  • optional edible flowers
  • optional Extra Microgreens of choice for garnish

Instructions

Vinaigrette

  • Combine strawberries, vinegar, and maple syrup in bowl. Let stand 30 minutes. Strain liquid into small bowl (keeping strawberries separate), and stir in lime juice and oil. Season with salt and pepper, if desired.

Salad

  • Toss together The Wacky Salad, Pea Shoots, sliced radishes, green onions OR baby salad turnips. Drizzle Vinaigrette on salad. Top with halved strawberries. Garnish with microgreens, chopped fresh herbs or edible flowers.
